Pancake Machine a Hit at Rydges Sabaya Resort


Piping hot pancakes and eggs cooked to order are the highlight of Rydges Sabaya Resort’s new breakfast buffet.

Breakfast chef Mohan Jayaweera said the Port Douglas resort had installed the region’s first pancake machine. “It is very popular with hungry guests wanting hot pancakes as soon as they ask for them,” he said.

Mohan’s specialty is omelettes cooked to order and he whips them up in any style – Spanish, Asian or European – while you watch.

With almost 40 years experience as a chef working in Asia, the Middle East and Australia, Sri Lankan-born Mohan enjoys adding influences from around the world to his menu, but believes in sourcing produce close to home.

This is evident in the fresh tropical juices he mixes each morning and the exotic fruits he combines with Mungalli Creek Greek-style yoghurt - all from the Atherton Tableland.

Muffins are baked fresh each day and all the usual breakfast favourites such as bacon, sausages and hash browns are cooked with extra virgin olive oil to be as healthy as possible.
