With the change of season sweeping through, Hyatt Regency Sanctuary Cove’s signature restaurant - The Fireplace - has varied their menu to complement the cooler months.

Infused with new flavours of a rich succulence, the updated menu is perfection against the restaurants intimate and rustic setting.

The Fireplace’s warm atmosphere is reminiscent of a private dining room in a large manor house. With chefs on show as they prepare contemporary and provincial style cuisine, diners can also appreciate the view overlooking the fountain terrace.

Located on the lower level of The Great House and boasting solid timber furniture, an open kitchen and custom built wood-fired ovens, The Fireplace is open nightly from 6:00 pm until 10:00 pm.

Patrons can enjoy a feast of starters, entrees, mains and sides created from fresh local produce and peppered with gourmet influences, such as smoked tomato vinaigrette or the apple balsamic red cabbage. Signature dishes such as the roasted field mushrooms, the slow roasted free range duck and Tajima Wagu cooked in the unique wood-fired oven remain popular staples on the new menu.
